Are you on the everything-can-be-made-with-cauliflower train? If not, I encourage you to get on! This cruciferous vegetable is a great source of fibre and vitamin C, plus it’s a low-carb alternative to grains and legumes. Some nights I’m all fired up to pull out my food processor, pour myself a glass of wine and make something adventurous for dinner. Other nights, I’m just not in the mood. Enter my favourite dinner hack – riced cauliflower. Stocking your freezer with frozen cauliflower will save you time, help you cut back on your carb intake, and allow you to add more fibre and veggies into your diet. Intrigued yet? Here’s three easy things to make with frozen riced cauliflower this week.

- A smoothie
I recently shared with you my genius trick for a thick and cold smoothie but I have one more up my sleeve. To give my smoothies a boost of antioxidants and to make it extra cold without diluting it with ice, I like to add a cup of frozen riced cauliflower to the blender along with my other smoothie ingredients. And the best part? The cauliflower is tasteless (yes, I promise) so you won’t even know it’s there.
2. “Rice”
I love rice and eat it almost everyday as part of my post-workout meal. But sometimes when I’m looking to add more vegetables into my diet or when I’ve maxed out on my complex carbohydrates for the day, I like to substitute with cauliflower rice instead. Just sauté the riced cauliflower in a skillet over medium heat and add a bit of olive oil. Cover with a lid for 5-8 minutes so that the cauliflower can become tender, then season as desired. And voilà – you’ve got rice.

3. Pizza

Making pizza at home is super simple and actually a lot of fun! If you dig pizza but you’re looking for a low carb option, I recommend that you try making your pizza dough with cauliflower. My husband and I made The Best, Easiest Cauliflower Pizza from Kitchn the other day and it did not disappoint. If you do end up making it, be sure to follow the directions and thaw your frozen cauliflower beforehand. Also, cauliflower crust is not as sturdy as traditional white flour dough, so you may have to fork and knife it.

Definitely try it out and let me know what you think! When I first heard of it, I was on the fence because I was worried it would change the taste of my chocolate smoothie (I don’t like anything messing with that 😄). But it doesn’t impact the taste at all.
